Wensleydale is made in the vale of Wensleydalc in Yorkshire. Originally it was a double-cream cheese, cylindrical in shape, which matured until it became blue in this form it was considered one of the best English blue cheeses, next only to Stilton. Since 1954 much of the Wensleydale production has been sold when white and in this form it is a mild, creamy-coloured cheese with a rather flaky texture. Blue Wensleydale is obtainable from specialist cheese chops.
