Said to be the oldest English cheese, Cheshire is another very well known type. Like Cheddar, it is a hard cheese, but rather more crumbly in texture, with a mild yet mellow flavour. There are two main varieties - the red, which is coloured by the addition of vegetable dye, and the white. There is no significant difference in the flavour. Blue Cheshire is also made but is not widely available. Farmhouse Cheshire, which is made from a single herd of cows, is also available. In all its forms Cheshire cheese is equally good cooked or uncooked.
