Seperate leaves fom the stems, and remove the midrib from the leaves. Discard both the stems and the midrib. Cut the leaves in pieces.

Cooking is normally achieved by one of two methods; braising or steaming.

braising

To braise the kale, cook in a small amount of salted water and a little butter for 8 - 10 min.

steaming

To steam the kale, place the kale in a steamer above rapidly boiling water. Sprinkle with salt, allow 1 tsp per pound, cover and steam for 15 min.
