John dory has a marvellous flavour. It is a difficult fish to handle because of the little sharp spikes which run all round the rim. However, there is a convenient pocket in the flesh near the belly which enables you to pick it up. The firm-textured fillets are easy to lift off, and the large strange-looking head makes excellent stock.
