Halibut recipes

This is a large fish and weighs from 9lb - 400lb and has a dark olive skin - lighter in places. Halibut is usually baked or grilled and has an excellent flavour. Chicken halibut is smaller weighing from 1lb - 8lb.
Largest of the flat fish, sold in steaks or fillets. Tail end can be a good buy. A real luxury fish, delicious poached with hollandaise.
